Declan Maxwell is an award winning Restauranteur. At the start of his career he worked with Nico Ladenis of Chez Nico , a 3 Star Michelin for 6 years in a London . A Graduate of DIT Cathal Brugha Street, Andrew has been General Manager of Fire Restaurant and Lounge on Dawson Street since April 2017. Working in the industry for the last 14 years, he has spent time working in Dubai, France, New Zealand and Australia, including three years working on a Luxury Cruise Line. He has a passion for working with people, and thrives on the buzz of working in our unique, dynamic industry.

Nicola Trained in Professional Kitchens and worked in high end Restaurants around the world for 15 years before opening her own place with her husband in 2016. Nicola competed on with the Irish national Culinary Team internationally for several years.

With a small team of ten staff, TwoCooks Restaurant Received a Bib Gourmand from Michelin in its first year of operation, as well as several other awards in its 3 years it has been open. Named best Casual dining by Catherine Cleary in 2016. Waterways Ireland 2017 , Best
