Joe Shannon is the executive chef of the Radisson blu hotel, Spa and leisure centre Sligo. He has been awarded many accolades, has travelled extensively, participating in all sorts of culinary delights.
His demonstration work has brought him to Irish festivals in Abu Dhabi as well as mainland Europe; he has given many lectures to collages on kitchen management, motivation and hygiene. He has been both competitor and judge at many international food competitions.
He is totally passionate about all things food and his cookery demonstrations are renowned
nationally for his inspirational dishes delivered with great passion and fun, raising over five hundred thousand euros for all sorts of good causes.
Joe also works extensively with media; he is a weekly guest chef on Ireland Am, which is Ireland most watched breakfast morning t.v. programme, working with some very famous Chefs such as Paul Hollywood, John Torode, John Burton Race and Antony Worrall Thompson to name just a few.
He also has worked on tv3s” Three O Clock show”. He has contributed to practically every radio station in Ireland! He has been featured on many magazines and newspapers.

Paul Fitzsimons, President and Hotel Concierge of Les Clefs d’Or Ireland. Paul eats, drinks and sleeps in Hospitality. Having worked in the industry for over 30 years Paul is looking forward to being a judge at this years South East Radio Hospitality Awards. He will be looking to see who affords a warm welcome to their guests and how this welcome continues right across his visit.

Brendan Maxwell has over 15 years experience in the hospitality industry. He holds a senior management position with the McCafferty Group, which owns over 70 pubs and hotels. Brendan is the area manager for 15 pubs in Ireland, UK & Spain and he overseas a staff of over 150.
